Croissant Sandwich, Smoked Salmon and Chive

Growing up in Paris, I didn’t encounter sandwiches made with croissants until my first semester of college in the States. It took a while to wrap my head around the idea of pairing a sweet pastry with savory fillings. However, as I spent time with friends trying out different combinations, I came to appreciate the idea. The best fillings include an acidic component to counter the buttery notes of the croissant.

For 1 sandwich

Ingredients

A day-old croissant
2 slices smoked salmon
3 cucumber slices
3 thin radish slices
1 teaspoon (5 ml) fresh lemon juice
½ teaspoon (2 pinches) chopped fresh chives
Salt and pepper

Split a day-old croissant in half. Layer the bottom half with 2 slices smoked salmon, 3 cucumber slices, and 3 thin radish slices.

Sprinkle with 1 teaspoon (5 ml) fresh lemon juice and ½ teaspoon (2 pinches) chopped fresh chives. Season with salt and pepper, top with the other half of the croissant, and serve.
