Poilâne has chosen whole walnut kernels harvested in the French regions most renowned for the quality of their walnut trees. Whole walnut kernels give more flavour and aroma than broken kernels. In order to preserve all the qualities of the whole walnut kernels, the bakers only add them to the dough at the end of the kneading process.
