To slice bread, even a large loaf like our signature sourdough loaf at Poilâne®, with our pocket bread knife, use back-and-forth movements and apply a bit more pressure for the return movement. Because the blade is thin, sideways movements may warp it. To close the knife, simply guide the blade back in without snapping it back into place.

Please do not wash your pocket bread knife under running water or in the dishwasher. You may clean it using a soft dry cloth for the wooden handle and a soft damp cloth for the blade. Every now and again, nourish its wooden handle with a touch of colorless wax furniture polish.

Our pocket bread knife was designed by Yves Guyot in collaboration with Apollonia Poilâne. An award-winning designer of gnomons and sundials, Thiers native Yves Guyot is also the son of a cutlery sales representative. He designed our pocket bread knife as a tribute to his longtime friend Lionel Poilâne. The knife’s handle is crafted from wine barrel oak, its tip has smaller serrations that are perfect for cutting meat, and it is cased in a supple lambskin sheath.
