Vegetable trimmings quiche

Ingredients

1 puff pastry
1 egg
2 large handfuls of vegetable trimmings (broccoli, chard... nothing gets thrown away!)
250 ml of liquid cream
Salt and ground pepper
1 tin of anchovy (optional)
Pepper or herbs of your choice (optional)

Preheat the oven to 356°F (180 °C).

Place the puff pastry in a greased pie tin. Place the vegetable trimmings on the bottom of the tart. Season with salt and pepper, or just pepper if you are using anchovies. Arrange the anchovies evenly (or not !).

Beat the egg with the cream. Pour the mixture over the vegetables. Bake for 30 to 40 minutes, checking for doneness.

A tip : the tart can be pre-baked for 30 minutes, cooled in the air and finished the next day in the oven for 15 minutes, the time to set the table and prepare a green salad.
